Rustic Vegetable Soup










After dinner at our Masonic lodge Sunday there were 3 vegetable trays leftover and instead of throwing them in the garbage I brought them home to use in a soup. This is the result of what can be done with leftovers if we think before we throw food away. I added a few potatoes, garlic, a few seasonings, olive oil and margarine.

Celery
Carrots
Broccoli
Cauliflower
Margarine
Garlic Cloves
Rustic Potatoes

Salt
Pepper
Olive oil
Curry Powder
Packet of chicken bouillon

Put all vegetables in a pot and cover with water. Bring to a rolling boil then turn down to simmer until veggies are to your liking. I cook for about 45 minutes because I like everything really soft.
